Homemade Cheese Soup


I despise the chemicals in canned cheese soup but my fave recipes use it. And I can't live without my homemade mac and cheese or my new fave grits and sausage recipe. What's a clean-eating wannabe to do? Make your own!

2 tbsp butter
2 tbsp flour
1 cup milk 
8 oz shredded cheese

Melt butter in saucepan and stir in flour. Whisk until combined with as few clumps as possible. Add milk and continue whisking at a simmer. Let thicken some more. Add cheese and stir until melted. Remove from hit and let thicken more. If you want a really thick cheese sauce like velveeta, double the amount of cheese. Depending on the type of milk you may need to add a smidge more for desired consistency.
