Cheeseburger Pie
This is a recipe of my mom's that I've changed up a bit to make into a low-fat dinner.
Ingredients:
1/2 pound of lean ground beef
1/3 cup of light mayo (I split this and use 1/6 light mayo and 1/6 plain Greek yogurt. You can sub completely for Greek yogurt, but I have found it to be a bit heavy)
1/2 cup of skim milk
8 oz reduced-fat shredded cheddar cheese
1 tbsp of corn starch
2 eggs
1 deep dish pie crust (sorry, I've looked high and low and cannot find a low fat pie crust)
Mix together and pour in pie crust. Bake on 350 for 45 minutes. These work great to double or triple the recipe and freeze or make for others.
