Potatoless Potato Skins

I tried substituting zucchini for potatoes for "potato skins" for dinner tonight - turns out super yummy. 

2 zucchinis
Pepper jack cheese (as much or as little as you want)
Bacon crumbles (as much or as little as you want)

Slice zucchini with mandolin slicer (thick option if you have it). Lay out on paper towels and sprinkle with salt to withdraw water. Put in baking tin or on aluminum foil and sprinkle with cheese and bacon crumbles. We grilled ours, but you could put in oven on 350 for about 10-15 minutes I would think.
