Eggie Muffins

I got this great recipe on Pintrest from the Disney Family Fun online magazine. You can make mini omelets with different ingredients for different people super quick. And baking them gives them a light and airy texture. This time I made them with cheese and peppers. I've made them before with cheese and turkey bacon too. I used and extra large muffin tin, so I had to cook for about 28 minutes.  If you use a regular muffin tin, I would think you'd have to do about 20 minutes.
