Pineapple Chicken Quesadillas

I can't take credit for this recipe. I love the original so much I didn't even alter it. The only think I did unique is probably the way I cook it.  I refuse to buy one more little kitchen electric to take up space for the one recipe I need it for (like a quesadilla).  So, I have been using my waffle maker to make paninis (my current fave being turkey and brie - OMNOMNOM) and as of today, quesadillas. 

One thing I tried this time did not work that well - I used crushed pineapple because I had some on hand. It was like pineapple sauce. Chunks work much better.
